The Correct Way to Open a Bottle of Wine

If you’re like most people, opening a bottle of wine can be a challenge. Too much pressure or pulling and the cork may break off. Wind the corkscrew too far in and you’ll be left with tiny bits of cork in everyone’s glass of wine. Learning the proper way to open a bottle of wine will not only let you look more impressive in front of the friends you are serving but will also allow you to serve higher quality vintages without the prospect of ruining them right off the bat.

The first trick in being able to remove the cork smoothly is to make sure that the wine has been stored correctly. All wine that is being stored for longer than a few weeks should be laid horizontally and stored in a cool, dry location. Corks do not actually seal the wine but allow a very small amount of air to permeate the cork over time in order to gently age the wine. In order to do this, the cork must be wet. To stay wet, the wine must remain in contact with the cork which only happens when the wine is laid on its side. An upright bottle allows the cork to dry out over time which shrinks it and allows too much air to enter which will oxidize and spoil the wine. A cork that is drying out can also be difficult to remove from the bottle.

The second secret is using the right tool for the job. Corkscrews come in all styles and shapes but a cheap corkscrew from the dollar store just isn’t up to the task of removing the cork straight out. Professional sommeliers prefer to use the one-armed, or waiters’, corkscrew. This design has a metal arm that leverages against the lip of the wine bottle to remove the cork. It is important with this design that the corkscrew is in deep enough so that the slight sideways pulling motion doesn’t tear the cork. With a one-armed corkscrew, the server does not put the bottle on the table but opens the wine while holding the bottle with the other hand. Once mastered, the one-armed corkscrew is easy to use but can take a while to get the hang of.

The more common two-armed corkscrew allows the server to pull down on matching arms after the screw is inserted in order to pull up on the screw and cork. This design can be more awkward to screw in but cork removal is more often successful for novices.

Regardless of the type of corkscrew, some basic cautions are necessary. The corkscrew should reach almost to the bottom of the cork but should not pierce through it. This prevents bits of cork spilling into the wine which can affect both the texture and the taste.

White wines should be opened just before serving but red wines should be uncorked at least a half hour before pouring. This allows the tannins of the wine to come into contact with the air so that off-flavors don’t occur.

Don’t jam the cork back in to the partly-empty bottle when you’re done pouring. Using a proper wine stopper will prevent cork breakage and seal out more air until the bottle is empty. Of course, emptying the bottle in one event is the best cure for that.
